Today I went to visit my Nana while Ben and the boys went to see Grandma Polly. Jacob was so excited to go see Grandma Polly and Sharon and said he had a really good time. Since there wasn't much going on with us today I had an idea to share a new recipe I came across a few days ago. Since Ben is dieting (and doing very well!!) I have been trying to find different recipes so we don't have to eat the same things over and over. When I find ones that we like I will try to post them on here because I know a few people are doing the same diet Ben and I are. And please feel free to share any with me. So here goes, we had this for dinner tonight......
Zesty Grilled Tilapia
Tilapia filets (I used 3 filets)
6T Olive Oil
2 T Grated Orange Zest
6-8 T Orange Juice
1T Grated Fresh Ginger (I would imagine ground would work too)
1T Hot Sauce
Salt and Pepper to taste
Place fish in a large nonmetal dish. Whisk together the oil, orange zest, orange juice, ginger, hot sauce, salt and pepper; pour over fish. Cover and marinate in the refrigerator for 30-60 minutes. Meanwhile prepare grill. Grill until fish just flakes when tested with a fork, about 5 minutes per side for each inch of thickness.
*I used our George Foreman grill to cook the fish on and only used the bottom grate. I marinated for about an hour and it had great flavor. Enjoy!!
